THE EL CARMEN ESTATE
The beautiful family run El Carmen Estate is located in the Santa Ana mountains in Western El Salvador. They process both coffee cherries from their own orchards as well as surrounding farms. The wet mill is a well run facility that also has capacity for honey, natural and anaerobic processing when they want to produce non-washed coffees.
The Pacamara is a proud native of El Salvador being originally crossed locally when a farmer wanted the unique but different tastes and growing qualities of two heirloom coffees: the Pacas and Maragogipe. The often savory flavors and visually eye catching large size of the coffee beans have made Pacamara a loved coffee variety the world over. Given an anaerobic processing after harvesting we end up with intense aroma and flavors.
Elevation is 1350+ MASL. Flavor profiles are citrus orange, green apple, floral, clean finish and light body.
