From the historic farms of San Carlos located amongst the ruins, tiendas and restaurants of downtown La Antigua, Guatemala, these unique beans stand out as the perfect selection for our newest addition to our signature selection.

What to Know:

Bourbon Undertones: The main varietal found on this farm for over 100 years is the Bourbon varietal--you see the connection.  These trees are carefully grown to bend toward the ground so harvesters can reach the cherries without stunting the growth of these precious beans

Don’t Stress the Trees: Coffee plants are naturally designed to produce every 2 years, however humans have been able to stress the plants to produce every year. On San Carlos, farmers allow plants to rest each year between production, and strip them completely at the end of each season. This allows these ancient Bourbon plants to live longer, stay healthy, and produce more each crop.

Clean Less, Grow Taller: on San Carlos, the trees are pruned only once every 10 years, allowing them to grow higher than those found on traditional Antigua farms. The taller shade trees help protect the plants from the frost while allowing a breeze to pass through the plantation keeping the beans crisp and cool.
